Beef suet is the firm, clean fat from around the kidneys, the gold standard for rendering pure, mild tallow and the classic choice for pie crusts, puddings, and bird feeders.

Render it low and slow, then strain for a clean, shelf-stable cooking fat. Sold as kidney fat, from cattle raised on our ranch in Sonoita, Arizona.
