Our ranch steak is a lean, flavorful cut from the shoulder, and the kind of honest, everyday steak we cook at home. It's a great value for weeknight dinners, steak and eggs, and the grill.

Cook it to medium rare and slice thin against the grain, or marinate it for even more tenderness. Raised on the Vera Earl Ranch in Sonoita, Arizona, by the same family since 1968.
