Our cross-cut beef shank is the cut for osso buco, birria, and hearty soups. The marrow-filled bone and rich connective tissue melt into a silky, flavorful braise.

Brown it well, then braise low and slow for three hours until the meat falls off the bone. Pasture raised on our Sonoita Valley ranch.
