Eye of Round Roast

The eye of round roast is lean, tidy, and easy to slice, making it the classic choice for homemade roast beef and deli sandwiches. It also makes great beef jerky.

Roast it to medium rare, rest it well, and slice it as thin as you can. Pasture raised on our Sonoita Valley ranch and never given hormones or antibiotics.
